Nicole Jax of Waltham — the 2013 Mower County Dairy Princess and one of this year’s finalists for the 60th Princess Kay of the Milky Way at the Minnesota State Fair — was 1 of 12 contestants who had her image carved in a block of butter. Jax attends South Dakota State University where she is studying dairy manufacturing with a minor in food safety.
