Getting to know the kohlrabi

Kohlrabi. What exactly is it?

You see it in abundance at the market, but you don’t know what it is or what to do with it. The word kohlrabi is German for cabbage turnip (kohl as in cole-slaw, and rübe for turnip) though kohlrabi is more related to cabbage and cauliflower than to root vegetables. The flavor of kohlrabi is unassertive, with delicate hints of cabbage and broccoli.

Kohlrabi is low in calories, high in dietary fiber, potassium, vitamins A and C, folic acid and calcium. You can find Kohlrabi vendors throughout the market.

Also available this week are raspberries, lettuce, beets, tomatoes, peppers, peas, green beans, honey, baked goods, crafts and more.

Visit us Thursday for special guest chef Jack Erwin as he demonstrates how to cook with local foods. Samples will be available. Bring the kids for a scavenger hunt. Prizes will be awarded.

Recipe of the Week

Kohlrabi Cole Slaw

4 c. peeled and grated Kohlrabi

3 grated carrots

1/2 c. sour cream

1/2 c. all natural mayonnaise

1 Tbsp. dijon mustard

2 Tbsp. lemon juice

1 tsp. apple cider vinegar

salt and pepper to taste

In a bowl, combine all ingredients and mix well. Chill for about one hour or serve immediately.
