Here are the winning recipes in the annual recipe contest for SPAM Jam:
First place – grand prize
SPAM Anna Bread
Ingredients:
1 (16-ounce) loaf frozen bread dough, thawed
1 (12-ounce) can SPAM luncheon meat, diced
1 (8-ounce) package shredded mozzarella cheese
1 teaspoon Italian seasoning
1 teaspoon garlic powder
2 tablespoons butter, softened
Cooking directions:
Preheat oven to 350 degrees F. Roll dough lengthwise into a 14×9-inch rectangle (about 1/4-inch thick). Top dough with SPAM, cheese and seasoning. Roll dough up jelly-roll style. Let stand at room temperature for 30 minutes. Spread top of bread with butter. Bake for 35-40 minutes or until golden brown. To serve, diagonally slice bread into 11/2-inch thick pieces. Serves 12.

South-of-the-Border SPAM Squares
Ingredients:
16 eggs
1 can SPAM Lite Luncheon Meat, diced
2 (4-ounce) cans diced green chilies
1 (41/2-ounce) can sliced mushrooms, drained
4 ounces cream cheese
11/2 cups shredded sharp Cheddar cheese
Salsa
Cooking directions:
Preheat oven to 350 degrees F. Lightly spray a 15x10x1-inch baking pan with nonstick cooking spray. Beat eggs with whisk; stir in SPAM, mushrooms and chilies. Pour egg mixture into prepared pan. Bake for 30-35 minutes or until eggs are slightly firm. Remove eggs from oven. While eggs are still warm, spread with cream cheese and top with the shredded Cheddar cheese. Cut into squares and serve warm with salsa. Serves 12.

Fiesta Turkey Breakfast Casserole
Ingredients:
1 (12-ounce) can SPAM Oven Roasted Turkey, finely chopped
1 cup salsa, drained
2 cups shredded Mexican blend cheese, divided
6 (8-inch) flour tortillas
4 eggs
2 cups whipping cream
1 (4-ounce) can diced green chilies
Cooking directions:
In medium bowl, combine SPAM, salsa and 1 cup cheese. Evenly divide mixture among each tortilla. Roll tortillas up. Place tortillas, seam-side down in a lightly sprayed 9×13-inch baking pan. In another bowl, combine eggs, whipping cream and green chilies. Pour mixture over tortillas. Cover and refrigerate overnight. Preheat oven to 350 degrees F. Bake casserole for 35-40 minutes or until set. During last 5 minutes of baking, top with remaining cheese. Serves 6.

Hot & Spicy SPAM Fingers
Ingredients:
1 (12-ounce) can SPAM Hot & Spicy Luncheon Meat, finely diced
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell pepper
21/2 cups water
1 cup cornmeal
1/2 teaspoon salt
1 cup cold water
Nonstick cooking spray
Vegetable or olive oil, for frying fingers
Orange marmalade, sweet and sour sauce or honey, for dipping
Cooking directions:
Lightly spray a 8x4x2-inch or 9x5x2-inch loaf pan; set aside. In large skillet, in oil, lightly brown SPAM and peppers; drain and set aside. Meanwhile, in medium saucepan, bring 21/2 cups water to a boil. In bowl, combine cornmeal, salt and cold water. Stir cornmeal mixture into boiling water. Stir constantly, until combined and slightly thickened. Stir in SPAM and pepper mixture. Spoon mixture into prepared loaf pan. Cover and refrigerate several hours or overnight; until firm. Using a spatula remove chilled SPAM mixture from loaf pan. Cut loaf into 3/4-inch thick slices and then into 3/4-inch fingers. In large skillet, heat vegetable or olive oil. Cook fingers in batches until lightly browned on all sides and warmed through. Serve with favorite dipping sauce such as orange marmalade, sweet and sour sauce or honey.

SPAM and Pasta Frittata
Ingredients:
1 (8-ounce) package whole wheat spaghetti
4 eggs
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup grated Parmesan cheese
1 (12-ounce) can SPAM Smoke Flavored Luncheon Meat, diced
1/4 cup butter or margarine
1/2 cup minced onion
2 tablespoons toasted sunflower seeds
Cooking directions:
Prepare pasta as directed on package. Meanwhile, combine, eggs, salt, pepper, Parmesan cheese and SPAM. In large skillet, over medium heat, melt butter. Add onion and cook until softened. Add spaghetti and egg mixture to skillet, stirring well to combine. Sprinkle with sunflower seeds. Cook until firm and the bottom is well browned. Invert skillet onto plate and return frittata to skillet (cooked side up). Cook until other side is cooked through and lightly browned. Invert skillet onto serving plate. Slice into wedges and serve. Serves 8.
