Wine room in the works

It’s home to a 2005 Justin Cabernet Sauvignon, a 2006 Toad Hollow Chardonnay and a 2005 Lemelson Pinot Noir.
It has a view of the Ramsey Dam, a 37-inch flat screen-TV, a jar filled with corks, low-voltage mood lighting and a pair of table settings.
The Old Mill Restaurant in Austin has long been a place for steaks, drinks and desserts, but it is now also home to a wine room, complete with places to eat and places to talk.
“I think our wine list and wine room is as nice as any in Rochester, and I’m really reasonable compared to other people in the same caliber,” owner Dave Forland said.
Forland is still putting finishing touches on the room, which hasn’t officially opened. He said he expects it to open sometime in the near future and also has plans for a cellar entrance and eventually a separate condensed menu.
For now, patrons can tour the room on request, which is accessed through the kitchen and down a short flight of stairs.
“It looks really cool down here at night,” Forland said.
In the wintertime, Forland can accommodate customers as well.
The floor is heated, and the window overlooking the dam offers a nice setting to view falling snow.
The restaurant is home to 170 different varieties of wine —from $17 a bottle to $155 — and Forland said most people choose somewhere in between.
“They don’t want the $20 bottle, but they don’t want the $80 bottle, so they’ll pick the $40 bottle,” he said.
For $17, customers can purchase an Australia Shiraz, while for $155, they can pair their king cut prime rib with a Gallo Estate Cabernet that’s not made anymore.
