Enjoy a holiday tradition with lefse

This week is the one time per year you have an opportunity to make lefse at the Senior Center with a real Norwegian.

Lefse making signals the beginning of Christmas. For those non-Norwegians, lefse is an ultra-thin, tortilla-like potato flatbread.

The dough is made from mashed potatoes, cream, butter and flour and is rolled thin with a special grooved rolling pin.

Once rolled out, it is placed on a special round griddle to bake at a very high heat. Many Norwegians use lefse much like a tortilla, to hold other food items like fish. Others use it as a sweet treat by sprinkling cinnamon and sugar on it and some simply warm it and smear it with a little butter.

The recipe varies from person to person and from family to family.

Once again we have the pleasure of having a true Norwegian come and teach us how to make lefse.

At 1 p.m. on Wednesday, make Lefse at the Senior Center with Ramona Swenson. Have fun stirring up a batch of Lefse, rolling it out and watching it brown on the grill.

Take a half dozen home with you for $5. This class size is limited to 10 people. Please make sure you sign up quickly if you want to attend by calling 1-507-433-2370.

Don’t forget our coffee shop where every day you can have homemade soup for $1 and a sandwich for 50 cents. On Tuesday we are serving scalloped potatoes and ham for only $2. You are always welcome at the center.
