I recently visited the new Spam Museum and was excited to see that the Hormel Institute was one of the displays.

Imagine my disappointment when reading the material, that NO mention of the research done in the 1950s and ‘60s was made. As a former employee, I worked for seven years analyzing fats and lipids, determining metabolic pathways, and purifying and supplying high quality fatty acid standards to laboratories around the world.

No mention was made of Dr. Ralph Holman who coined Omega-3 and Omega-6 fatty acids, Dr. Orville Privett who developed a more sensitive analytical detector, Drs. Eldon Hill, Herman Schlenk, Jacques Chipault, Hemut Mangold and the other dedicated scientists who spent their time researching fats and lipids.

To omit their contributions to science is a sad oversight which should be rectified.
